In the iconic Gardens by the Bay complex on 100 hectares of reclaimed land between Marina Bay and the southern coast, SuperTree by IndoChine rises over 50 metres and is the newest bar and restaurant from the IndoChine Group. Boasting spectacular 360° vistas of the Singapore skyline and out towards the South China Sea, SuperTree combines a rooftop deck bar as well as a lounge and dining room serving a delicious blend of Western and Indochinese fare with a focus on sustainability and organic ingredients.
The commitment to eco-consciousness extends further than the food. The restaurant is constructed from rice husks and recycled materials and the air-con uses heated water used in the restaurant. The full-length glass windows give the bar and dining room a spacious feel and when the night comes around, the SuperTree light displays are a sight to behold.
The food is a sumptuous mix of flavours, ingredients and textures inspired from classic Western and Indochinese dishes and there is a wide range of bar snacks and tapas-style sharing platters including Vietnamese spring rolls, grilled lemongrass tiger prawns and pan-seared red drum fish. The main courses aren’t quite fine dining to Michelin star-standard but are superb nevertheless and every table has a clear view of the stunning surroundings. Inside, the restaurant has been split into two themed hemispheres – Eastern and Western – and the décor adds a real touch of luxurious glamour and excitement.
As dinner ends, go upstairs to the rooftop bar and prepare yourself for a view unlike any other. The drinks menu is a heady mix of beer, wine, Champagne and premium spirits as well as health-conscious ‘mocktails’ and 15 varieties of sake. The Singapore ‘it’ crowd can be found up the tree with any one of dozens of classic and signature cocktails.
