Opened in 2011, Sky on 57 is the latest restaurant from Singaporean Justin Quek, one of Asia’s most famous and revered chefs and he has designed a stunning menu featuring his unique take on Franco-Asian dining at its very finest. His modern, innovative approach to French cuisine, in the words of his website ‘melds a mastery of technique with a delicacy of touch. He singlehandedly put Singapore on the global gastronomic map and in the process inspired a new generation of chefs.’
The 12,000ft² restaurant, while spectacular on its own, offers discerning diners a fully immersive experience. The views from the 57th floor of the iconic Marina Bay Sands are sensational and the lighting creates a warm, inviting ambience that lets you know you’re in a fine dining restaurant of the highest order but allows you to feel comfortable and relaxed – rare at the upper echelons of gastronomy.
While Chef Quek has travelled around the world taking inspiration from flavours, tastes and textures from everywhere he’s been, his menu pays homage to his home with his unique twists that set him apart. He has a real skill for taking seemingly ordinary dishes and elevating them to a seriously high standard.
Standout dishes on the menu is the foie gras xiao long bao, roasted crackling suckling pig with yuzu pepper, Maine lobster ravioli with braised leeks and laksa emulsion and the much-lauded Pandan and Gula Java macaron but whatever you choose, you are guaranteed food prepared with sophistication, intricacy and a sense of theatre. The wine list is equally as sophisticated including bottles chosen by Chef Quek himself.
