From a two-table stall in the 1950s to a 1,100 capacity restaurant today, Roland is eponymously-named and he is the son of Madame Cher Yam Tiam, the creator of one of Singapore’s most famous dishes, chilli crab.

Roland sticks to the original recipe (and is the only place in Singapore where you can find it) which is a little sweeter and less rich than other versions which are as good, just different.

While the star of the show is the wonderfully-fresh Sri Lankan crabs, the sweetness of the sauce enhances the flavour of the shellfish and the addition of roe and the incredible fried mantou bread rolls to soak up the spectacular sauce turns Roland’s chilli crab from a very, very good one into one of the best you’ll taste.
