On any list of the best sushi in Singapore, Tatsuya will always appear. Located at the five-star heritage Goodwood Park Hotel close to Orchard Road, chef Ronnie Chia has created what has been described as ‘the grand-daddy of Japanese cuisine in Singapore…where freshness is unparalleled and attention to detail is unrivalled.’

The 23-seat sushi bar is supposed to be the longest in Singapore and thanks to the chef’s world-class knowledge of Japanese produce and his almost pathological attention to the smallest detail, even culinary demi-god Ferran Adria of El Bulli fame came to Tatsuya when he was in Singapore.

You can sit outdoors but inside at the counter is where you’ll see the sushi chefs at work. Set lunches start from around S$20 – S$30, bento boxes from around S$45, the kaiseiki course is S$165 and the omakase menu is S$200 which is expensive, but when you taste the impeccably-sourced seasonal food, you won’t begrudge a cent.

The star of the show is the aburi sushi, beautifully executed with perfect garnishes and tasting like it came straight from the ocean but everything you eat at Tatsuya will satisfy even the most discerning taste buds.
