The winner of the Best New Cocktail Bar at the 2016 Bar Awards, Gibson is the latest chilled-out nightspot from the folks that brought you Jigger & Pony on Amoy Street. In the owner’s own words ‘Gibson was conceptualised to elevate the cocktail-lovers’ bar experience to unexpected territory. Our aim was to create an ultimate cocktail bar experience defined by a limitless cocktail program that showcases craft and creativity at the most pronounced level, and an indulgent raw seafood menu that celebrates the pure, pristine flavours of raw seafood.’

Cocktails are inspired by people, time and places rather than their alcoholic composition (Prohibition, Snow Field, Disco Era or Crimson Bullet, inspired by Breaking Bad character Walter White’s complex character). There is also an outstanding selection of first-class Bourbon, rye, single malt and blended whiskies from Ireland, Scotland and Japan as well as a decent wine list.
The food at Gibson plays second-fiddle to the cute cocktails but it is excellent, regardless of the narrow choice that includes a seafood platter, sea urchin, lobster rolls and oyster sliders but if you’re looking for a chilled out bar with stained glass windows and antique ceilings where you can eat, drink and chat in understated style, Gibson is the place.
