Catalunya

The Fullerton pavilion
82 Collyer Quay
Singapore 049327

With incredible views of Marina Bay, chefs trained by legendary food God Ferran Adrià of El Bulli fame and a menu that, in their own words ‘reflects the diversity of Spanish cuisine, and elegantly melds the finesse of Asian hospitality and classic Spanish charm’, Catalunya rightly lays claim to be Singapore’s finest Spanish restaurant.

Incredible explosions of flavour permeate every bite of every dish, even something as seemingly simple as pa amb tomaquet, or Catalan bread with tomato puree is nothing like you’ve ever experienced, and the sensation is made even better as you sit with 119 other lucky diners under a glass-encased dome watching the activity in the bay.

Hors d’oeuvres of beautifully-manicured tapas including the stunning jamon Iberico, their unique take on the classic ham and cheese sandwich and a tartare that you have to guess what it’s made of. Tapas is swiftly followed by a Segovian-style suckling pig (for 2-3 people at S$135), a roasted veal shank, lamb ribs with a pumpkin puree and an 18-month aged, grass-fed rib eye of beef at S$98. Seafood comes in the form of red snapper grilled to perfection, Mediterranean red prawns and a charcoal-grilled catch of the day.

You’ll find touches of Japanese elements throughout the dishes but this is Spanish, more specifically Catalan, cuisine at its very best. The team of chefs use the very best seasonal ingredients to create a menu that while it’s not cheap, you’ll know where the extra money goes when you take your first bite. The 32-page wine menu features bottles from Spain and around the world as well as a very well-curated cocktail list.

Catalunya raises the profile of Spanish cooking to the highest possible level and it is ‘must visit’ restaurant on any gastronomic tour of Singapore.
